I learned not to look at Pinterest when I’m hungry. There are too many temptations! But, I did stumble across a two-ingredient cookie pin that wouldn’t break the “calorie bank”!
2 ripe bananas combined with 2 cups of oats. While that sounded simple and wholesome, I wanted to add a few more ingredients to create trail mix cookies.
Really, you can add whatever you like to the base mixture.
Here’s what I used:
2 ripe bananas
2 c. oats
1/2 c. vanilla protein powder
1/4 c. chia seeds
1/4 c. chocolate chips
1/2 c. almonds
1/2 c. dried cranberries
Mash the bananas and oats together first.
Then, combine additional ingredients.
Scoop mixture into small balls (think golf balls) and place on cookie sheet. You may want to spray the sheet with Pam first.
Bake at 350* for 14-16 minutes.
These are great for an on-the-go breakfast or a simple, healthy snack. Cooper still prefers his milk bones though.
