Happy Friday! I have an easy, peasy snack to share with all you. No baking, just a food processor.
One of my favorite healthy bloggers, Lindsay, creates outstanding healthy fuel called Healthy Bites. I can’t come close to her flavor combinations, but she always inspires me to think outside the box. Then, I saw Kerri’s Paleo Energy Bar creation and thought I’d marry the two.
Easy Energy Bites:
24-30 pitted dates
1 cup of raw almonds
1/2 cup of dried cranberries
1/4 cup of dark chocolate chips
vanilla protein powder
I soaked 30 or so dates in water for a few hours to soften. Then, I chopped up the almonds in the food processor and set them to side.
Then, blend the dates into a paste.
Add the cranberries, followed by the almonds and chocolate chips.
Next, roll the mixture into balls. Prepare to get sticky here.
These would be pretty messy to eat, so I used a page from Lindsay’s book and rolled the balls in vanilla protein powder.
Then, stick them in the freezer for a an hour or so to hold shape.
Keep these guys refrigerator so they stay firm. We all love firm balls don’t we? Wait…
Nothing earth shattering, but they sure are tasty! The light dusting of protein makes all the difference-they don’t stick to my fingers, and I love the vanilla kick. Spencer loves my balls too. 😉
Cooper prefers a stick though…
Do you like his haircut? He had a lump removed 2 weeks ago that thankfully was just a fatty tumor. I had it checked last fall and knew it was benign, but it had the potential to change. I remember reading Julie’s post, and I kept obsessing over it every time I pet Cooper, so we got it removed. I’d never forgive myself if something happened to him.
